Vegetable Biriyani

Ingredients:
  • Rice - 1 cup
  • Tomato - 2 (chopped)
  • Onion - 2 (chopped)
  • Potato - 1 (chopped)
  • Beans - 7 (chopped)
  • Carrot - 1 (chopped)
  • Soya Chunks (meal maker) - 1 cup
  • Garlic paste - 1 teaspoon
  • Ginger paste - 1 teaspoon
  • Green chilly - 2 (sliced)
  • Biriyani powder -1 teaspoon
  • Salt - to taste
  • Oil - 1 tblspoon
  • Ghee - 3 teaspoon
  • Mustard - 15
  • Cumin - 20
  • Fennel - 10
  • Cashew nut - 5
  • Curry leaves - 10
  • Coriander leaves -1 handful
  • Mint leaves - 1 handful
  • Bay leaf - 1
  • Cinnamon - 2
  • Clove - 3
  • Star Anise -1
  • Lemon - 1 (sliced)
  • Water -2 cups




Steps to Prepare:
  1. Wash the rice and keep it separately.
  2. Soak soya chunks in a boiled water for 1 minute and then drain it and keep away.
  3. Take a cooker and add oil, ghee, mustard, cumin, fennel, curry leaves, cinnamon, clove, star anise, pepper, bay leaf, cashew nut and fry it.
  4. Now add onion, tomato, garlic, ginger, Soya chunks (meal maker), coriander leaves,mint leaves, chilly powder, biriyani powder, salt and fry it.
  5. Then add rice and water into the cooker. Stir it well and close the lid.
  6. Cook it for 1-2 whistle and after the pressure has released, open the lid.
  7. Garnish it with coriander leaves and Lemon slices. Serve it hot.
