Vegetable Biriyani
Ingredients:
- Rice - 1 cup
- Tomato - 2 (chopped)
- Onion - 2 (chopped)
- Potato - 1 (chopped)
- Beans - 7 (chopped)
- Carrot - 1 (chopped)
- Soya Chunks (meal maker) - 1 cup
- Garlic paste - 1 teaspoon
- Ginger paste - 1 teaspoon
- Green chilly - 2 (sliced)
- Biriyani powder -1 teaspoon
- Salt - to taste
- Oil - 1 tblspoon
- Ghee - 3 teaspoon
- Mustard - 15
- Cumin - 20
- Fennel - 10
- Cashew nut - 5
- Curry leaves - 10
- Coriander leaves -1 handful
- Mint leaves - 1 handful
- Bay leaf - 1
- Cinnamon - 2
- Clove - 3
- Star Anise -1
- Lemon - 1 (sliced)
- Water -2 cups
- Wash the rice and keep it separately.
- Soak soya chunks in a boiled water for 1 minute and then drain it and keep away.
- Take a cooker and add oil, ghee, mustard, cumin, fennel, curry leaves, cinnamon, clove, star anise, pepper, bay leaf, cashew nut and fry it.
- Now add onion, tomato, garlic, ginger, Soya chunks (meal maker), coriander leaves,mint leaves, chilly powder, biriyani powder, salt and fry it.
- Then add rice and water into the cooker. Stir it well and close the lid.
- Cook it for 1-2 whistle and after the pressure has released, open the lid.
- Garnish it with coriander leaves and Lemon slices. Serve it hot.
